Celery Root Salad |

fresh celery roots (celeriac) 1/2 cup champagne vinegar or white wine vinegar 1 TBS Hengstenberg Medium Hot Mustard 1/4 Cup Enova Oil 2 Vidalia onions, thinly sliced Sea salt and white pepper to taste 2 Tbsp chopped fresh chives _______________________________________________ 1. Remove gnarled roots of the celeriac. Place in pot and cover with water. Bring to a boil. Cook until tender but still firm. Remove from hot water and immerse in ice water to cool. 2. When roots cool, peel and julienne them. 3. Combine vinegar, mustard, oil, onion, and 1/4 cup of water in a medium sized bowl. Add sea salt and white pepper to taste. 4. In a large bowl, combine celery root and dressing. Toss well. Garnish with chives. Serve cold.
